The variety of vine albariño has central european origens. It is documented that in the XII century the monks from Clunny (a medievalo town near Mâcon-France, where the Benedictine monks established their see), brought the vine to these latitudes.

Aquis Celenis has 7 hectares of albariño vineyard. The fertilizers are organic and no herbicides are used. Our phytosanitary products are friendly with the environment and with the vines that produce our wines.

The vines are trained along high trellises, with a plant density of between 600 to 1000 vines per hectare. The production of grape is of 7,500 kilos per hectare.

The vine-growing is based on traditional methods using natural products such as nettles, lime, sulphur and copper sulphate to protect the vines and grapes, from fungal diseases and other predators.

 

A first treatment based on nettles is applied to the vine shoots to fortify the plant. When the leafs reach a height of 15 to 20 cms, they are sprayed with lime and sulphur. About the middle of May, the vines are sprayed with copper sulphate at a concentration of 0.5%, to prevent attacks from mildew. This treatment continues during the months of June, July and August. Before the harvest, the grapes are treated with lime to protect them from grey rot. About the middle of September, the grapes are harvested by hand, placing them carefully into boxes of 18 kgs.
